As the whole south west part of France, it is a land of duck (duck confit, foie gras), cheese, Gaillac wine, and rich, terroir food like the cassoulet or « aligot and saucisse » (mash potatoes with local cheese and sausage). You’ll taste the delicious Aligot and saucisse , a typical mash potatoe dish from the north of our region Occitanie. made with fresh cow cheese called Cantal.
